Matured seafood products

Matured seafood products account for a significant part of the products in the Norwegian fishing industry and also constitute a large proportion of exports from the seafood industry.

Salted fish, clipfish, stockfish and smoked fish all have long traditions in the fishing industry.

Research in this area covers topics including how different raw materials and production methods influence profit and taste, and how time-consuming production can be modernised and made more efficient without adversely affecting quality or profit.

This area also covers the development and adaptation of new products and production concepts to meet the suppliers' and consumers' demand for products that are quick and easy to prepare. Another relevant topic here is solving issues relating to quality provisions and shelf life of matured seafood products.
