A series of factors influence the fish's quality: crowding, pumping and stunning.

Nofima works along the entire supply chain from slaughtering at the fish farm to market testing. We carry out projects spanning from the evaluation of stunning and killing systems to the effect these methods have on quality.

A central goal is to contribute to new methods enhancing both product quality and the fish's welfare in the slaughtering process.

The slaughtering procedure begins the moment feeding of the fish ceases at the fish farm.

Stunning, killing, fish welfare and quality

The new slaughterhouse regulations, which came into force in 2007, stress considerations for the fish's welfare. The main areas are requirements about the operator's level of competence and a requirement that the fish is stunned before it is bled.
