Post doc in the NRC financed project ”The effect of dietary carbohydrates on muscle metabolism, connective tissue composition and fillet quality in cod (Gadus morhua L.)”.
I work mainly with proteoglycans and glycosaminoglycans in muscular connective tissue in fish (Atlantic cod). I investigate whether the composition of muscular extracellular matrix is altered when cod is fed different levels and sources of carbohydrates. Connective tissue composition influence fillet quality.
