Facts about Ragni Ofstad

Dr. Ragni Ofstad is Principal Scientist at Matforsk and is now serving as Director for Department of Raw materials and Process Optimisation. She has been involved in research on research on characterisation of fish and meat muscle including histological and micro-spectroscopic analyses. Her particular expertise is on relationships between raw material intrenisic factors (morphology, protein structure, post mortem degradation and functionality), and extrinisic factors (handling, processing) and functionality of proteins being significant for the food quality. She has several years experience from research work of both meat and fish, and has also management experience as head of the R&D department in a major Norwegian food company (Mills DA). She has broad experience as research team leader and co-ordinator of national research programs, Nordic scientific projects and of industry funded contract work, as reviewer of international grant proposals and journal manuscripts and as organiser of scientific meetings. She is a national member of the Cost Domain Comittee of Food and Agriculture (http://www.cost.esf.org/)
