Abstract The objective of the proposed research was to further enhance and develop the existing knowledge base at Nofima on Russian studies and consumer behaviour. Drawing on existing empirical and conceptual knowledge combined with relevant research based consumer behaviour knowledge we intend to develop up to date knowledge of new developments in food choice behaviour in transitional economies, exemplified with Russia. The subgoals of the project were: · Identify Russian consumers’ main food choice motivations in relation to actual behaviour. · Explore adolescents’ relative preferences for different foods. These will be compared with adults’ preferences in order to detect possible trends. · Explore Russian meal structure in order to identify any differences in attitudes, preferences and behavioural pattern.
