Simulation models

The effect of heat can be simulated based on actual heat readings, the product's geometry and data on the product's heat transmission properties.

For this we use either software that has been specially developed for heat treatment or, in more complicated cases, a general process simulation tool (Comsol Multiphysics). Using this tool, we can model very complex problems. For example, the modelling of food in a microwave oven demands that one must model both the electromagnetic field and the transmission of heat through the product. Another example is the modelling of partly liquid foods, where both the flow of the fluid and the transmission of heat must be modelled. Once the temperatures in the product have been calculated, then the lethal effect on bacteria can be simulated at every point and a judgement can be reached on product safety.
