Optimizing feed composition to obtain improved texture quality of salmon fillets

This project builds on results obtained in a previous project financed by FHF (“Firmer salmon fillets”), where we obtained improved texture quality of salmon fillets by adding certain components to the feed.

The specific aims of this project are to study texture quality in salmon fed diets added the amino acids glutamate and arginine, and secondly to study the relationship between soft flesh of salmon fillets and health related, morphological and biochemical parameters.
