The levels of trace element (Zn, Cu, Mg, Mn) availability in the muscle is able to influence the activity of degradative enzymes post mortem.

Trace elements in farmed and wild cod will be measured using flame atomic absorption spectrophotometry and also by mass spectrometry (when access to the facilities at the Mat-Nat faculty is established).
