I am a Ph.D. student at Nofima Mat and belong to the department of Raw Materials and Process. My doctoral project is part of the EnzymePig Project. Main aim in this project is to investigate and evaluate the influence of Norwegian pig breeds slaughtered at different ages on the enzymatic activity in pork meat to produce good quality dry-cured hams. I focus on characterization of enzymatic degradation of proteins. In this project I use proteomics as the tool to study several hundred proteins at the same time. The proteomics tools are based on protein separation using two-dimensional electrophoresis (2-DE) followed by the use of mass spectrometry (MS).
