Facts about Kjersti Aaby

Originally I am an organic chemist from the Norwegian Technical University in Trondheim. At Nofima Mat I have been working with chemical analysis, mainly chromatography, of compounds in foods. In 2007 I received my PhD degree with the thesis “A study on polyphenols and antioxidant activity: Distribution in strawberry fruits and effects of processing and storage”. My current interest and research focus is still on bioactive compounds, primarily polyphenols, in fruits and berries and how they are affected by processing and storage, but also what happens with these compounds after ingestion. To characterize and quantify polyphenols and other compounds, I use HPLC with different detectors, such as UV-visible light, mass spectrometry and electrochemical detectors.
