Education:
I hold a master’s degree in molecular medicine (2008) and bachelor’s degree in biomatematics (2006) from NTNU, Trondheim.
Research interest:
I am currently working as a PhD fellow in the research project “Optijuice By-products from fruit and berry processing – a source of health promoting components?”. This project is a user-directed research project financed by The Research Council of Norway in cooperation with Tine BA/Fellesjuice AS, Findus Lier, and Department of Nutrition, University of Oslo (UiO). The aim of the project is to optimize the extraction of phenolic compounds during the processing of fruit juice, and thereby achieve a better utilization of the raw material, and additionally a more health optimal product. I will characterize the phenolic composition in the different juice extracts and new food products and also investigate the biological effects on human cells in culture. Further, clinical trials will be used to determine the health effects of these polyphenol-rich food products.
