Facts about Simon Ballance

I am a research scientist working with carbohydrates and biopolymers (large molecules) found in food and in particular cereals, fruits and vegetables.

Of particular focus is the health related impact of these molecules in food in relation to their chemical and physical structure.

Most of my work involves either basic or applied research financed by the national research council, the EU or the food industry.

I was educated at the University of Manchester, UK where I obtained my PhD from the School of Biological Sciences on the physical and chemical characterisation of macromolecules in snail mucus and their interaction with aluminium.

On completion of my education I moved to Trondheim, Norway.

Here I worked as a post-doc/research scientist at the Norwegian University of Science and Technology (NTNU) based at the department of biotechnology (2001-2007).

My research was focused on the characterisation and application of biopolymers extracted from Sphagnum moss and the characterisation of bioengineered alginate biopolymers produced by bacteria.
