The European market for ready-to-eat meals is steadily growing. The aim of this project is to develop fresh and tasty solutions for ready-to-eat meals for retail sale, also considering food safety and nutritional value. The project started by evaluating the quality and nutritional value of the ready-to-eat meals currently on sale, and established guidelines for how the products can be improved.

Consumer surveys, process and product development

The project is primarily about process and product development of ready-to-eat meals. In collaboration with the industry and research institutes in the Netherlands and Germany, Nofima Mat has tested new processes and treatments for different raw materials, and developed new packaging methods. Furthermore, Nofima Mat is leading a work package to elucidate how Norwegian and European consumers perceive ready-to-eat meals, both traditional meals and new meals being developed in the project.
