In collaboration Lierne Bakeri, two bakeries in Finland and the Finnish research institute VTT, which is also administrating the project.

The aim of the project is to create new, healthier cakes that will appeal to consumer taste.

As a first stage, consumer perceptions of various ingredients and of the health aspect have been investigated. This has been done using focus groups in various consumer segments in both Norway and Finland. Based on the results of these investigations, the development of new and healthier cakes has begun. In this stage, sensory properties are linked to consumer acceptance of the new products.
