Electronic nose

The electronic nose is a device designed to measure smells or tastes. Over the last decade the development of e-sensing has gone from being technically interesting to being commercially interesting.

With the aid of a concept based on chemical gas sensor array instruments, Nofima Mat can help to meet the food industry's need for objective, automated, non-destructive techniques that can characterise smell and taste in food. We have for example helped to develop a gas sensor based automated control system for smoked salmon.

 

The electronic nose will have uses in:

  • odour analysis
  • lipid oxidation
  • freshness and wastage
  • taste and unpleasant tastes
  • food safety
  • process control and packaging.

E-sensing technology for food is however still at an early stage.
