In raw materials

Healthy raw materials for the Norwegian market are in focus at Nofima Mat. We have international research competence in the bioactive components of cereals, seafood, vegetables, fruit and berries.

We also research into the presence of the bioactive components during preparation, processing and storage, as well as how the components can complement each other in the meal or menu seen as a whole. We are working on reviewing and creating foods that have a health advantage.

Antioxidants and bioactive plant extracts

Many plant substances reduce the risk of cardiovascular disorders, cancer and other illnesses. Fruit, berries and vegetables in particular contain a wide spectrum of bioactive plant substances and so have a positive effect on our bodies and our health in both short and long term.

Carbohydrates and fibre

Carbohydrates are important constituents of food. They provide texture and flavour and they also have special biological and biochemical effects that are relevant for health.

Fat

Fat (lipids) is a complex and important constituent of food and is of great significance for the food's taste, texture and energy. Various fatty acids in fat and oil can have positive or negative effects on obesity, cardiovascular disorders, cancer, inflammation or other disorders.

Probiotics

Probiotics are bacteria that have a positive effect on our health - usually lactic acid bacteria. Nofima Mat has been researching into these for many years. Prebiotics are fibres or carbohydrates that stimulate the growth of probiotics.

Proteins

Proteins are important components in the food we eat; they are important building materials for the body and they help keep you feeling full for longer. The composition of proteins is also important for the functional properties and the end product quality of the raw materials.

Salt

The body needs about 1 gram of salt (sodium chloride) a day and it has a significant effect on fluid balance, nerves and muscles. But salt can also have negative effects on conditions like high blood pressure. On average we eat about 10 grams of salt a day.
