In the mind

At Nofima Mat we have cutting edge international competence in understanding the consumer's experience and sensory perception of healthy food in different situations.

We research the interplay between people, food and context:

  • what the consumer perceives as healthy food
  • how food should be labelled with its health effects
  • how healthy products and components are perceived sensorily
  • what consequences this has for the consumer's choice

We focus particularly on children, young people and the elderly and their attitude to healthy products, especially with a view to increasing these consumers' knowledge about personal nutrition.

Labelling of food

Nofima Mat's research into the labelling of food focuses, in this context, on how food products should be labelled with their health effects. To this end, we are participating in a large Nordic project which is reviewing how consumers in all the Nordic countries perceive health claims about food.
